– 1/2 teaspoon turmeric powder

– 1/2 teaspoon red chili powder

– 1/2 teaspoon amchur powder (dried mango powder)

– 1/2 teaspoon cumin seeds

– 1/2 teaspoon mustard seeds

– 1/2 teaspoon urad dal (for seasoning)

– 1/2 teaspoon chana dal (for seasoning)

– 1/2 teaspoon fenugreek seeds (for seasoning)

– 1/2 teaspoon asafoetida (hing)

– 2 tablespoons oil

– 1 tablespoon lemon juice

– 1 tablespoon ginger-green chili paste

– 1/2 cup chopped onions

– 1/2 cup chopped tomatoes

– 1/2 cup chopped green chilies

– 1/2 cup chopped coriander leaves

– 1/2 cup chopped mint leaves

Instructions

1. Soak the urad dal in water for at least 4 hours or overnight.

2. Grind the soaked urad dal into a smooth paste using a blender or food processor.

3. In a large bowl, mix the besan, rice flour, semolina, salt, turmeric powder, red chili powder, amchur powder, cumin seeds, mustard seeds, urad dal, chana dal, fenugreek seeds, and asafoetida.

4. Add the ground urad dal paste to the bowl and mix well.

5. Gradually add water to the mixture, stirring continuously until a smooth, thick batter is formed.

6. Let the batter rest for 30 minutes.

7. Heat oil in a pan and add the cumin seeds, mustard seeds, urad dal, chana dal, fenugreek seeds, and asafoetida. Allow the seeds to splutter.

8. Add the chopped onions, tomatoes, green chilies, ginger-green chili paste, and salt to taste. Cook until the onions are soft and the tomatoes are mashed.
