– 1 teaspoon ginger-garlic paste

– 1 teaspoon curry leaves

– 1 teaspoon coriander leaves

– 1 teaspoon fennel seeds

– 1 teaspoon mustard seeds

– 1 teaspoon urad dal (split black gram)

– 1 teaspoon chana dal (split chickpeas)

– 1 teaspoon toor dal (split pigeon peas)

– 1 teaspoon chilka dal (split mung beans)

– 1 teaspoon tamarind paste

– 1 teaspoon jaggery

– 1 teaspoon sambar powder

– 2 tablespoons oil

– 2 tablespoons ghee

– 1 teaspoon mustard seeds

– 1 teaspoon urad dal

– 1 teaspoon chana dal

– 1 teaspoon toor dal

– 1 teaspoon chilka dal

– 1 teaspoon tamarind paste

– 1 teaspoon jaggery

– 1 teaspoon sambar powder

– 1 teaspoon turmeric powder

– 1 teaspoon red chili powder

– 1 teaspoon cumin seeds

– 1 teaspoon fenugreek seeds

– 1 teaspoon asafoetida

– 1 teaspoon ginger-garlic paste

– 1 teaspoon curry leaves

– 1 teaspoon coriander leaves

– 1 teaspoon fennel seeds

– 1 teaspoon mustard seeds

– 1 teaspoon urad dal

– 1 teaspoon chana dal

– 1 teaspoon toor dal

– 1 teaspoon chilka dal

– 1 teaspoon tamarind paste

– 1 teaspoon jaggery

– 1 teaspoon sambar powder

– 2 tablespoons oil

– 2 tablespoons ghee

Instructions

1. Soak the urad dal and rice in water for 4-5 hours or overnight.

2. Grind the soaked urad dal and rice to a smooth paste, adding salt as needed.

3. In a separate bowl, mix the spices and add them to the urad dal and rice paste.

4. Heat oil and ghee in a pan. Add mustard seeds, urad dal, chana dal, toor dal, chilka dal, and tamarind paste. Cook until the dals are golden brown.

5. Add the ground spices, ginger-garlic paste, curry leaves, and coriander leaves. Cook for a few minutes.

6. Add the tamarind paste, jaggery, and sambar powder. Cook until the mixture thickens.

7. Take a small portion of the urad dal and rice paste and shape it into a ball. Repeat this process until all the paste is used up.

8. Heat oil in a deep frying pan. Add the vadas and fry until they are golden brown and crispy.

9. Serve the Sambar Vada with hot Sambar and a side of coconut chutney.
