Preparation

1. Selecting Tomatoes: Choose ripe, firm tomatoes with a deep red color. Avoid overripe or green tomatoes, as they may affect the flavor and texture of the sauce.

2. Peeling and Slicing Tomatoes: Bring a large pot of water to a boil. Core the tomatoes and make a shallow X on the bottom. Place the tomatoes in the boiling water for about 30 seconds to 1 minute, then transfer them to an ice bath to cool. Once cooled, the skin will easily peel off. Slice the tomatoes in half and remove the seeds and juice.

3. Chopping Ingredients: Finely chop the onion and garlic. In a separate bowl, combine the dried oregano, basil, salt, pepper, and sugar (if using).
