The fermented liquid, known as wash, is then distilled in a pot still. Bourbon must be distilled to no more than 80% alcohol by volume. The distillate is then transferred to a second still, where it is further distilled to achieve the desired proof.

5. Aging

The distilled whiskey is then aged in charred oak barrels. The aging process is crucial to the development of bourbon’s flavor. The char on the barrel’s interior helps to create the whiskey’s characteristic caramel color and vanilla, oak, and spice flavors.
