Introduction

Dal baati, a traditional Indian dish, is a testament to the rich culinary heritage of the subcontinent. Comprising of a lentil stew (dal) and round, hard bread (baati), this dish is a staple in many Indian households. Its origins can be traced back to the royal kitchens of Rajasthan, where it was once a delicacy reserved for the royal family. Today, dal baati has become a popular dish across India, celebrated for its simplicity, flavor, and nutritional value. This article aims to delve into the recipe for dal baati, exploring its ingredients, preparation, and cultural significance.

Ingredients and Preparation

Ingredients

To prepare dal baati, you will need the following ingredients:

– 1 cup of toor dal (split pigeon peas)

– 1 cup of moong dal (split green gram)

– 2 tablespoons of ghee (clarified butter)

– 1 teaspoon of cumin seeds

– 1 teaspoon of turmeric powder

– 1 teaspoon of red chili powder

– 1 teaspoon of coriander powder

– 1 teaspoon of garam masala

– 1 teaspoon of amchur powder (dried mango powder)

– Salt to taste

– 2 cups of whole wheat flour

– 1 teaspoon of yeast

– 1 teaspoon of sugar

– 1/2 cup of warm water

– 2 tablespoons of ghee for kneading

– 1/2 cup of ghee for frying baatis

Preparation

1. Dal Preparation: Wash the toor dal and moong dal thoroughly. In a pressure cooker, add the dal, 4 cups of water, turmeric powder, and salt. Cook until the dal is soft and well-cooked. Once cooked, remove from heat and let it cool.

2. Baati Preparation: In a bowl, mix the whole wheat flour, yeast, sugar, and warm water. Knead the dough until smooth and elastic. Cover the dough with a damp cloth and let it rest for 1 hour.

3. Frying Baatis: Heat ghee in a deep frying pan. Divide the dough into small, equal-sized balls. Flatten each ball slightly and fry in the ghee until golden brown and crispy. Drain the baatis on a paper towel.

4. Dal Preparation: In a separate pan, heat ghee and add cumin seeds. Once the seeds crackle, add turmeric powder, red chili powder, coriander powder, garam masala, and amchur powder. Sauté for a minute. Add the cooked dal and mix well. Adjust the seasoning and serve hot with baatis.
